Ingredients

  • 1.5 lbs boneless wild-caught salmon fillet
  • 2 cups sweet potato, peeled and cubed
  • 1 cup brown rice, dry
  • 1 cup green beans, chopped

  • 1 cup fresh spinach, chopped
  • 4 cups water

Step-by-Step Instructions

  1. Rinse brown rice thoroughly and combine with 3 cups water in a large pot. Bring to a boil, reduce heat to low, cover, and simmer for 35-40 minutes until tender and water is absorbed.
  2. While rice cooks, steam sweet potato cubes in a steamer basket over boiling water for 15 minutes until fork-tender. Set aside to cool slightly.
  3. In a separate pan, poach salmon in 1 cup water over medium-low heat for 12-15 minutes until internal temperature reaches 145°F. Remove skin and any bones, then flake into bite-sized pieces.
  4. Steam green beans and carrots together for 8-10 minutes until crisp-tender. Roughly chop after cooking.
  5. In a large mixing bowl, combine cooked rice, steamed sweet potato (lightly mashed), flaked salmon, steamed vegetables, and fresh spinach.
