  • 1/4 cup finely chopped fresh parsley
  • 4 cups water

Step-by-Step Instructions

  1. Steam or boil the sweet potato cubes until fork-tender, approximately 15-20 minutes. Drain and set aside to cool slightly.
  2. In a large pot, bring 4 cups of water to a gentle simmer. Add the diced salmon fillet and poach for 8-10 minutes until cooked through and flaky.
  3. Remove the salmon with a slotted spoon, reserving the cooking liquid. Flake the salmon into bite-sized pieces, checking carefully for any remaining bones.

  5. In a large mixing bowl, combine the flaked salmon, mashed sweet potatoes, steamed green beans, cooked quinoa, and chopped parsley.
