Turkey & Quinoa Bowl
Ingredients
- 1 lb ground turkey (93% lean)
- 1 cup quinoa (dry)
- 1 cup chopped green beans
- 1 medium carrot (diced)
- 1/2 cup canned pumpkin (pure, not pie filling)
- 1 tbsp olive oil
- 4 cups water (for quinoa cooking)
- 1/2 cup blueberries
Step-by-Step Instructions
- Rinse quinoa thoroughly under cold water to remove bitter saponins
- Bring 4 cups water to a boil, add quinoa, reduce heat to low, cover and simmer for 15 minutes until fluffy
- In a large skillet over medium heat, cook ground turkey breaking it apart until no pink remains, about 8-10 minutes
- Steam or microwave green beans and carrots until tender, approximately 5-7 minutes
- Combine cooked quinoa, turkey, and vegetables in a large bowl
- Mix in canned pumpkin, olive oil, and blueberries until evenly distributed
- Allow to cool completely before portioning into airtight containers
