Ingredients
- 1 lb (450g) lean ground beef (90% lean)
- 1 cup (240g) canned 100% pure pumpkin (not pie filling)
- 1 cup (150g) cooked brown rice
- 1/2 cup (60g) finely chopped carrots
- 1/2 cup (60g) chopped green beans
- 2 cups (480ml) low-sodium beef broth
- 1 tbsp (15ml) olive oil
- 1/2 tsp (1g) dried parsley
Step-by-Step Instructions
- In a large pot, brown the ground beef over medium heat, breaking it into small pieces, about 5-7 minutes. Drain excess fat.
- Add the low-sodium beef broth, carrots, and green beans to the pot. Bring to a simmer and cook for 10 minutes until vegetables are tender.
