Ingredients
- 1 lb lean ground beef (90/10)
- 2 cups canned pumpkin puree (100% pumpkin, not pie filling)
- 1 cup brown rice (uncooked)
- 1 cup chopped carrots
- 1 cup chopped green beans
- 4 cups low-sodium beef broth
- 1 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- 1/2 cup sweet potato, diced
Step-by-Step Instructions
- In a large pot, brown the ground beef over medium heat, breaking it into small crumbles, about 8-10 minutes. Drain excess fat.
- Add the diced sweet potato, carrots, and green beans to the pot. Stir and cook for 5 minutes until slightly softened.
- Pour in the low-sodium beef broth and bring to a simmer. Add the uncooked brown rice.
